Preheat the oven to 180°C. Break up the chocolate with the butter and melt in the microwave on medium for about 5 minutes, stirring halfway through. Beat the sugar and eggs in a bowl. Stir in the melted chocolate, add the flour and beat well.
Spray cups of a muffin tin with cooking spray, and add brownie batter to each cup until they’re about two-thirds full.
Spray the second muffin tin with cooking spray and place on top of the first tin of brownies.
Place in the oven and bake for 40-45minutes.
Remove from the oven and cool. After the brownie bowls are completely cool, add a scoop of Cortina Ice Cream, top with chocolate sauce and sprinkles, and enjoy!
