Bring the chicken stock to a boil. In small container with a lid, place the dry couscous and pour over the hot chicken stock. Close the lid and leave for 5 minutes. Remove the lid and fluff the cooked couscous with a fork.
In small bowl combine tzatziki ingredients, stirring until well mixed.
Distribute all ingredients evenly in a large bowl and a sprinkling of salt and pepper. Drizzle with spicy tzatziki as desired, then serve!
