Make the pizza sauce by heating a frying pan until hot. Add the oil, onions and garlic and fry for 3-4 minutes. Add the chopped tomatoes, sugar and the chopped basil and bring to the boil. Reduce the heat and simmer for 20 minutes, or until the sauce has thickened. Season to taste with salt and freshly ground black pepper and set aside to cool.
Preheat oven to 200°C. Line a large baking sheet with baking paper or tin foil. Place pizza bases on the baking sheet. Top each with pizza sauce, Kefalos Mozzarella, and your desired toppings. Bake mini pizzas for 10-15 minutes, or until cheese is melted. Serve with extra grated Kefalos Kefalatori.
