
Autumn is in the air and while the evenings are getting cooler and darker, the fragrance of garlic and chicken on the stove will make being indoors a cosy place of comfort and togetherness. This single pan chicken dish is a winner for weekday evenings.

Ingredients
- 4 medium-sized skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons LURPAK butter or olive oil
- 4 cloves garlic minced
- 1 cup Kefalos fresh cream
- 1/2 cup KEFALOS kefalotiri cheese, grated
- 1 tablespoon fresh or dried oregano
- 1 cup chopped spinach (optional) or 1/2 cup of pitted black olives (optional)

Instructions
- Using a large pan, heat the butter over medium-high heat
- Sear the chicken breasts for 4 to 5 minutes on each side, until golden brown and cooked through. Season to taste and remove from the pan.
- Reduce the heat to low-medium and add the garlic, stirring for 30 seconds.
- Add the cream, oregano, and kefalotiri cheese, continuously stirring until combined.
- If you wish to add spinach or olives, do so now and let it simmer at low heat for 2 minutes.
- Add the seared chicken to the sauce in the pan and simmer for approximately 1 minute, just to warm up the chicken and immerse it in the sauce.
- Serve the creamy garlic chicken on a bed of rice or pasta or with a side of vegetables. Enjoy
