
Melted ice cream is usually a sad affair, but the good news is that melted ice cream is the superstar ingredient in this delicious sponge cake. You won’t find a simpler cake recipe and you can experiment with different ice cream flavours.

- 2 Cups melted ice cream (any flavour)
- 1.5 Cup self-raising wheat flour

Instructions
- Place the melted ice cream in a medium sized mixing bowl
- Mix in the self-raising flour until you have a thick batter
- Spoon the batter into a greased or lined bread tin and smooth out evenly
- Bake for 30 minutes at 180 degrees Celsius
- To test if the cake is ready, insert a toothpick or skewer in the centre. If it comes out clean your cake is ready
- Cool down the cake on a cooling rack
- You can slice the cake and serve just as it is or you can decorate it with sprinkles, icing, or any topping of your choice
- If you want to be a little more adventurous, add fresh blueberries as we have in our picture.
